Macaroons

Macaroons are a traditional Passover dessert, because they don't have any flour in them. They're also delicious and only take a few minutes to make.

How to make macaroons:

Preheat the oven to 350.

In a medium-size mixing bowl, mix one packet of sweetened grated coconut, two eggs, 1 teaspoon of lemon zest (or a teaspoon of vanilla), and 1/4 cup of sugar. Grease a cookie sheet with olive oil. Form the batter into small balls (a little smaller than golf balls) and place on the cookie sheet. Bake about 20 minutes or until a little browned on top.

If you'd rather have chocolate macaroons, leave out the lemon zest and use vanilla instead. Melt two squares of baking chocolate with 1/4 cup of water in the microwave, and add that to the batter.

Vegetarian or Vegan?

Macaroons are vegetarian, but they're not vegan because of the eggs. For a vegan spring dessert, try celery granita, or strawberries in sugar.

Will macaroons keep?

Yes, for a few days in a closed container. They'll get stale if they're not tightly covered.
